Giacomo's Gabagool (Dry-Aged Capicola or Coppa) is always crafted in small batches the old fashioned way: using a simple blend of high-quality pork, salt, garlic, and whole black peppercorn. The blend is hung and dry-aged in a natural casing for 9 months to achieve the perfect texture and flavor.
The end result is a delicate, savory and sumptuously spiced masterpiece fit for even the most discerning Paisano. Molto bene!
